Greek Ravani Cake

- 6 eggs (separate and save whites and 2 yolk) shopping list
- 2 ¼ cups sugar shopping list
- 2 ¼ cups flour shopping list
- 2 ¼ cups semolina shopping list
- 1/2 teaspoon baking powder shopping list
- 1/4 cup grated lemon rind shopping list
- Syrup shopping list
- 9 cups sugar shopping list
- 7 cups water shopping list
- 2 vanilla beans (do not cut open) shopping list
- juice of 1/2 lemon shopping list
How to make it
- Whisk the egg whites into fluffy meringue and add the egg yolk.
- Add the sugar, flour, baking powder, semolina and lemon rind. Mix well.
- Pour into a large baking pan.
- Bake for about 45 minutes at 180 degrees.
- Leave to cool and prepare syrup.
- Bring the water to boil with the sugar, vanilla and lemon juice.
- Boil for 5 minutes.
- Cut cake into pieces while still in the baking pan and pour the syrup over it.
- Let it cool to room temperature.
