Fakhes moutzentra Lentil with rice

- 1 cup of brown small lentils shopping list
- 4 cups of water shopping list
- 1/4 cup of rice, short grain or arborio or any small shaped pasta shopping list
- 1 big onion finely chopped shopping list
- 1/4 extra virgin olive oil (reserve 2 spoonfuls for the end) shopping list
- salt and pepper shopping list
How to make it
- Wash lentils but before doing so check if there is anything to be removed, maybe a small stone etc.
- Boil lentils for ten minutes, then strain and add fresh water (just to cover them) and put to boil again.
- Meantime, heat oil and sauté the onion until slightly browned.
- When lentils begin boiling, add rice (or pasta), salt and pepper.
- Lower heat and cook for 15 minutes until rice is soft 5 minutes before they are ready add the onion, together with the oil. Add the reserved oil and mix well.
- Accompany with black Kalamata olives, or salted herrings.
