Carrot and Apple Passover Kugel

- 1/2 cup vegetable oil shopping list
- 2 pounds carrots shopping list
- 2 pounds of apples shopping list
- 2 tsp. sugar shopping list
- 2/3 cup matzoh meal shopping list
- 1 tsp. ground nutmeg shopping list
- 1 tsp lemon juice shopping list
- grated zest of a small lemon shopping list
- 1 cup toasted almond slivers shopping list
How to make it
- Preheat oven to 350. Lightly oil a 2 quart shallow baking dish.
- Peel the carrots and shred them in a food processor - you will net about 8 cups.
- Core and peel the apples. shred them as well. You'll net about 2 cups.
- Coarsely chop the nuts except for a reserved 1/4 cup to top the dish with.
- Combine all but 1/4 cup of the almonds in a large bowl.
- Transfet the mix to the prepared dish.
- Sprinkle the reserved nuts on top and bake about 25 minutes, until the top just starts to brown.
