Leftover Roast Beef Stew

A lazy day today! This was an quick and easy way to use up leftover roast beef from the day before! It gave me 6 generous helpings. I served it with fresh brown bread with herbs.
Ingredients
- 6 thick slices beef, cubed shopping list
- bag of freshly frozen stew mix shopping list
- 15-20 button mushrooms shopping list
- tin of chopped tomatoes shopping list
- packet of beef casserole mix shopping list
- garlic puree shopping list
- 1 tablespoon olive oil shopping list
- 1/2 tablespoon dried oregano shopping list
- 1/2 tablespoon dried basil shopping list
- salt and freshly milled black pepper to raste shopping list
How to make it
- Sweat the veg in the oil
- add garlic , tomatoes and casserole mix
- reduce heat to low
- add beef and mushrooms and simmer for half an hour
- taste for seasoning, add salt and pepper if required
