Apricot Nectar Cookies

- 2 3/4 cups of flour shopping list
- 1 teasp. baking powder shopping list
- 3/4 cup white sugar shopping list
- 1/4 cup dark brown sugar - packed shopping list
- 1 cup butter, softened shopping list
- 1 large egg shopping list
- 1/4 cup apricot nectar shopping list
- 1/2 cup apricot preserves, (the better the preserves the better the flavor of the cookie) shopping list
- 3/4 cup soft dried apricots, chopped shopping list
How to make it
- in medium bowl: mix the flour and baking powder
- in a large mixer bowl: blend sugars on medium speed.
- add butter. mix to form a grainy paste
- add egg, apricot nectar, and the preserves.
- mix on medium speed until smooth
- add flour mixture and the dried apricots
- mix on low speed just until blended. Don't over mix
- drop by rounded Tablespoon onto a lightly greased cookie sheet
- 1 1/2 inches apart
- bake at 300'F for 22 -24 mins. or until the cookies just start to brown on the bottom edges
- let cookies cool on the cookie sheet for 5 mins.
- then transfer them to a cool flat surface like a counter top.
