How to make it

  • Preheat oven to 425°F.
  • Toast 1/2 cup coconut; set aside.
  • Bake pie crust 8 minutes, cool slightly.
  • In medium bowl, beat eggs.
  • Add sweetened condensed milk water, vanilla, salt and nutmeg, mix well.
  • Stir in remaining 1/2 cup coconut.
  • Pour into crust.
  • Sprinkle with toasted coconut.
  • Bake 10 minutes.
  • Reduce oven temperature to 350°F; bake 25 to 30 minutes longer or until knife inserted near center comes out clean.
  • Cool.
  • Chill if desired.
  • Store leftovers covered in refrigerator.

    Question: Does this recipe call for ONE + 1/4 cups Hot Water or just 1/4 cup? The 9-inch pie shell barely accommodates 1/4 cup. Please advise.

    I remember as a kid going to the local diner after school to have a hot chocalate and piece of pie......this or strawberry rhubarb...Isn't it strange, the things that make a memory....;D
