Three-Bean Ravioli Minestrone Soup

- 1 Tbs olive oil shopping list
- 1 lg onion, chopped shopping list
- 2 carrots, chopped shopping list
- 2 celery stalks, chopped shopping list
- 2 cloves garlic, minced shopping list
- 1/2 tsp salt shopping list
- 1- 10 oz box frozen green baby limas shopping list
- 1/4 tsp pepper shopping list
- 1- 15 oz can kidney beans, rinsed/drained shopping list
- 2 tsp italian seasoning shopping list
- 1- 15 ½ oz can garbanzo beans, rinsed/drained shopping list
- 3- 14 /12 oz cans chicken broth shopping list
- 1- 7 oz package mini cheese ravioli shopping list
- 2- 14 ½ oz cans diced tomatoes shopping list
How to make it
- Cook onions, carrots, celery and garlic in olive oil in large stockpot over medium-high heat until tender, stirring often (about 10 min).
- Add beans, tomatoes, broth and seasonings.
- Reduce heat to medium, simmer for 20 minutes.
- While simmering, prepare ravioli according to package directions. Stir in ravioli just before serving.
- Serve with garlic bread.
