75 Year Old Orange Date Nut Cake

- 2 sticks unsalted butter, softened shopping list
- 4 cups sugar, DIVIDED shopping list
- 4 large eggs shopping list
- 4 cups all-purpose flour shopping list
- 1 teaspoon soda shopping list
- 1-1/2 cups buttermilk shopping list
- 1 (8 ounce) package chopped sugared dates shopping list
- 1 cup toasted pecans, THEN chopped (I chop by hand, think it's better than bought chopped pecans) shopping list
- 4 teaspoons grated orange rind, DIVIDED shopping list
- 1 cup orange juice shopping list
How to make it
- In large mixer bowl, on medium speed beat butter until fluffy
- Gradually add ONLY 2 cups sugar, beating well
- Add eggs, 1 at a time, beating until blended after each addition
- In another bowl, combine flour and baking soda
- Add to butter mixture alternately with buttermilk, beginning and ending with flour mixture
- Beat at low speed until blended after each addition
- STIR in dates, pecans, and ONLY 2 teaspoons grated orange rind
- Pour batter into greased and floured 10-inch tube pan
- Bake at 350 for 1 hour 10 minutes or until sooden pick inserted in center comes out clean
- Bring orange juice, REMAINING 2 cups sugar and REMAINING rind to boil in saucepan, stirring constantly, 1 minute
- Carefully run a knife around edge of cake gently, punch holes in cake with a wooden pick
- Drizzle orange juice glaze over warm cake
- COOL IN PAN on wire rack
- When cool, turn cake onto plate or stand
- ABSOLUTELY DELICIOUS! WONDERFUL! ENJOY!
