Chipotle Meatloaf

- 1 (7 oz) can chipotle chiles in adobo sauce shopping list
- 1/2 cup onion, finely chopped shopping list
- 1/2 cup fresh cilantro, coarsely chopped shopping list
- 1/4 cup regular oats shopping list
- 1/4 cup dry breadcrumbs shopping list
- 1/4 cup tomato sauce shopping list
- 2 tsp fresh parsley, chopped shopping list
- 1 tsp salt shopping list
- 1/2 tsp ground cumin shopping list
- 1/2 tsp dried oregano shopping list
- 1/4 tsp dried basil shopping list
- 1/4 tsp black pepper shopping list
- 2 garlic cloves, minced shopping list
- 2 large egg whites shopping list
- 2 lbs ground turkey shopping list
- cooking spray shopping list
- 1/4 cup tomato sauce shopping list
- 1 tbs ketchup shopping list
- 1/2 tsp hot sauce shopping list
How to make it
- Preheat oven to 350°.
- To prepare meat loaf, remove 1 chipotle chile and 1 teaspoon adobo sauce from can; reserve remaining chiles and sauce for another use. Chop chile. Combine chile, adobo sauce, onion, and next 14 ingredients (through ground turkey) in a large bowl, stirring to combine. Place beef mixture in a 9 x 5-inch loaf pan coated with cooking spray. Bake, uncovered, at 350° for 30 minutes.
- To prepare topping, combine 1/4 cup tomato sauce, ketchup, and hot sauce in a small bowl; brush mixture evenly over meat loaf. Cover and bake an additional 30 minutes or until thermometer registers 160°. Let stand 10 minutes before slicing.

Thanks for the tip, I haven't tried it with the ground turkey, using beef has always come out perfect for us.

I see some knucklehead gave you a low rating. I got one for my meatloaf too and it must be the oats. This is a great recipe and the only thing I'd do different is use 1 cup of oatmeal and omit the breadcrumbs only because I prefer it that way.

I printed and made this one last week and it rocked. It had lots of flavor but the chipotle didn't kill you at all. Loved it and I'll make it again. Thanks for sharing.
