Kagianas Or Strapatsada Tomato Omelet

- 1 kilo of ripe tomatoes ( 4 – 5 depending on size) shopping list
- 6 eggs shopping list
- salt – pepper shopping list
- olive oil shopping list
- Additional optional ingredients: feta cheese, hot chilly pepper. shopping list
How to make it
- Peel tomatoes and finely cut with knife. I prefer to use a non-stick frying pan so as to use less oil but if you have no problem with calories do it the classic way.
- Heat oil and add tomatoes, salt and pepper and stir until all juices are evaporated and have a dense sauce.
- Beat the eggs and add to mixture, stir well until eggs are done.
