Unexpected Turnip Casserole

- 1 large or 2 medium turnips, peeled and chopped into pieces shopping list
- 2 carrots, peeled and chopped into pieces (optional) shopping list
- 2 small macintosh apples, peeled and chopped into pieces shopping list
- 2 extra large or 3 large eggs, separated shopping list
- 1/2 tsp salt shopping list
- 1/2 tsp pepper shopping list
- 1 tsp nutmeg shopping list
- 2 tbsp brown sugar shopping list
- Add a bit more sugar and nutmeg if you find you end up with a huge heaping mound of mashed veggies shopping list
- 1/2 cup breadcrumbs shopping list
- 2 tbsp butter shopping list
How to make it
- Preheat oven to 350 degrees
- Peel turnip, cut up into pieces, and boil turnip until tender
- Mash turnip (and carrots/apples if you are using)
- Mix in egg yolks, nutmeg, salt, pepper, brown sugar
- Beat egg whites in separate dish until soft peaks form
- Mix in the egg whites - this is what makes the turnip lighter than your normal turnip dishes (as well as the carrots and/or apples if that's what you've chosen to add)
- Smooth turnip mixture evenly over bottom of greased casserole dish
- Melt butter and add breadcrumbs, and sprinkle mixture over top
- Bake for 35 to 40 minutes
