Ukrainian Veselka Poppyseed Cake

- 3/4 C. poppy seeds shopping list
- 3/4 C. milk shopping list
- 3/4 C. unsalted butter shopping list
- 3 eggs, separated shopping list
- 1 1/4 C. white sugar shopping list
- 2 C. unbleached white flour shopping list
- 2 teaspoons baking powder shopping list
- 1 teaspoon pure vanilla extract shopping list
- pinch of salt shopping list
How to make it
- The day before...or early the same day, soak the poppy seeds in the milk for 5 to 6 hours.
- Cream the butter and sugar together.
- Add egg yolks, one at a time. Mix well after each addition.
- Add the vanilla and poppy seed mixture.
- In another bowl, combine the dry ingredients together.
- Add to the first mixture of liquid ingredients.
- In a separate bowl, beat the egg whites until stiff.
- Fold into the first mixture.
- Pour into 2 greased and floured loaf pans (9X13") or one Bundt pan.
- Bake in a 325 to 350 degree F. oven for approximately 1 hour.
- Cool completely.

Haven't had a good poppyseed cake in I don't know how long. Warm with butter, heaven in a mouthful. Definitely have got to try this. Great post.

My daughter made this today I and had it warm w/butter and tried it with orange blossom honey and tea. Heaven in a mouthful. Who says you can't have your cake and eat it too!
