Pineapple Fritters

- 1/2 pineapple,peeled and sliced shopping list
- 75g flour shopping list
- pinch of salt shopping list
- 2 tsp caster sugar shopping list
- 1 egg,seperated shopping list
- 175ml white wine shopping list
- 25g butter,melted shopping list
- oil for deep frying shopping list
- castr sugar for dusting shopping list
How to make it
- Cut pineapple peices in half. seive flour and salt into a mixing bowl.stir in the sugar,then gradually add the egg yolk and wine, until smooth, stir in the butter and leave to stand for 30 mins...
- Whisk egg white until stiff, using a large metal spoon fold the whisked egg white gently into the batter mixture...
- Heat the oil in a large pan, coat the pineapple peices in the batter mixture and quickly lower into the oil, cook for 2-3mins or until golden...
- Remove from the pan and drain well on kitchen paper....dust with caster sugar and serve!

Awesome recipe. Thanks for a great 5 forks treat. Just in case anyone else wonders about the caster sugar. Here in Canada & probably in the US too it's called Fine sugar or ex-fine sugar & also Berry sugar. It's just white sugar with very fine granul...more
