Old Fashioned Sweet Chicken Curry

- 1 small diced onion shopping list
- 1 finely diced or crushed clove garlic shopping list
- 1or2 tsp.mild curry powder[I used Keens] shopping list
- 1 desert sp. of pl. flour shopping list
- 1 1/12 to 2 cups of vegetable stock shopping list
- left over baked chicken shopping list
- mushrooms of choice shopping list
- silverbeet,spinach or greens of choice,diced or shredded shopping list
- 1 or 11/2 cups white rice shopping list
- i sweet apple shopping list
How to make it
- Fry onion,garlic till softened
- add curry powder& flour
- mix togethered over low heat until flour is cooked
- gradually add stock while mixing with wooden spoon until thickened
- add shredded chicken,mushrooms and silverbeet [spinach]
- cover and cook gently while you cook rice
- serve with some pecans on top
- The good thing about this recipe is that you can vary ingredients
- Add cut up sweet apple
- just remember to add more stock if you add more ingredients for a rich creamy sauce...also good recipe to introduce kids to curries

Going to give this a try this week. I like simple curry.. and I was told by my Doctor who is from India, to toast the curry in a dry pan until you smell it... It works! This really sounds good... thanks!
