Bus-stop Chicken

- 4 cloves garlic shopping list
- 1 small onion, chopped shopping list
- 1 bunch green onions, chopped shopping list
- 1 stalk celery, chopped shopping list
- 2 jalapeno peppers (or to taste), chopped shopping list
- 1/2 tsp. ground allspice shopping list
- 2 tbsp. fresh thyme shopping list
- 1 tbsp. balsamic vinegar shopping list
- juice of 1/2 lime shopping list
- 2 bay leaves shopping list
- 1/2 bunch flat leaved parsley shopping list
- 1 tsp salt shopping list
- 1 tsp. freshly ground black pepper shopping list
- 1/2 cup olive oil shopping list
- 1/4 cup rum shopping list
- 12 chicken pieces (I use bone-in thighs) shopping list
How to make it
- Puree all ingredients except chicken in a food processor. If the mixture is too stiff, add a bit of water.
- Place chicken and marinade in a glass bowl or dish and make sure all the pieces are well coated. Marinate, refrigerated for 12-24 hours, the longer the better.
- Shake excess marinade from chicken and grill directly over medium heat until juices run clear and the chicken is cooked through. Approximately 40 minutes.
- Remove chicken from grill and let rest for 10 minutes.
