Korean Chicken Lettuce Wraps

- Marinade shopping list
- 1 1/2 tbsp. low sodium soy sauce shopping list
- 2 tbsp. brown sugar shopping list
- 1 1/2 tbsp. sesame oil shopping list
- 1 tbsp. Gochujang sauce (store bought or home made! Recipe in intro) shopping list
- 1 tbsp. minced fresh garlic shopping list
- 1/2 tsp. fresh ground black pepper shopping list
- 6 b/s chicken thighs shopping list
- 1 tsp. sesame seeds shopping list
- 1 tbsp. olive oil shopping list
- 1 cup cooked jasmine rice shopping list
- 12-18 fresh boston lettuce leaves, washed and dried shopping list
- 4 green onions, chopped shopping list
- 1 cup pickled carrots shopping list
- Extra Gochujang sauce poured into little dipping bowls for serving shopping list
- Pickled carrots shopping list
- 2-3 large carrots, washed, peeled and spiralized shopping list
- 1/4 cup vinegar shopping list
- 1/4 cup sugar shopping list
- 1/4 cup water shopping list
How to make it
- Combine the marinade ingredients in a large zip-top plastic bag.
- Add chicken pieces.
- Refrigerate for at least 2 hours.
- Remove chicken from bag and discard marinade.
- Heat a large skillet over med-high heat.
- Add oil to pan, swirl to coat.
- Add chicken, cook five minutes on each side or until done.
- Sprinkle sesame seeds over cooked chicken. Cut in slices.
- Pickled Carrots:
- Spiralize carrots and put in a mason jar with the other three ingredients. Let sit for a day to absorb the flavours.
- To serve:
- Top each lettuce leaf with some chicken thigh slices, a tbsp. of so of cooked jasmine rice, green onion bits and pickled carrot to taste. Fold and dip in more Gochujang sauce. (I put the sauce in little serving dishes on each person's plate) Devour.

We make a lot of lettuce wraps and these are high up there on my favorites now! The flavors really came through, even with me using chicken breasts, which are usually less flavorful. So glad I made a ton and we had plenty of leftovers. Thanks Jane...more

Delicious!! We loved it, especially the marinade! Besides pickling the carrots, it comes together so quickly and easily. A winner! :)
