Lobster Quiche

- • One 9 inch (22 cm) pie crust. shopping list
- • 1 cup half-and-half or milk. shopping list
- • 4 eggs, lightly beaten. shopping list
- • 1/4 tsp. salt. shopping list
- • 1/4 tsp. FG pepper. shopping list
- • 1 cup diced, cooked lobster. shopping list
- • ½ cup asparagus, diced. shopping list
- • ½ cup mushrooms, thin sliced. shopping list
- • 1 cup shredded Swiss or cheddar cheese (4 oz). shopping list
- • 1/4 cup grated Parmesan cheese. shopping list
- • 1 Tbs. chopped onion, if desired. shopping list
How to make it
- 1. Heat oven to 350°F. (175 C).
- 2. Place pie crust in 9-inch pie plate.
- 3. In medium bowl, mix half-and-half, eggs, salt and pepper; set aside.
- 4. Layer lobster, cheeses, asparagus, mushrooms and onion in crust-lined plate.
- 5. Pour egg mixture over top.
- 6. Bake 40 to 50 minutes or until knife inserted in center comes out clean.
- 7. Let stand 5 minutes; cut into wedges.
