Pecan Crusted Pork Tenderloin

- • 1 cup apple cider. shopping list
- • 1 Tbs. light soy sauce. shopping list
- • One 2 lb. (1 kg.) pork tenderloin, trimmed. shopping list
- • ½ cup raw sugar. shopping list
- • 1 Tbs. spicy brown mustard. shopping list
- • 1 small onion, chopped. shopping list
- • 1 lg. bay leaf. shopping list
- • Salt and FG pepper to taste. shopping list
- • 2 garlic cloves, minced. shopping list
- • 2/3 cup chopped pecans. shopping list
- • 1 tsp. olive oil. shopping list
How to make it
- 1. Combine apple cider, soy sauce, onion and bay leaf with pork in a zip-top plastic bag; seal and marinate in refrigerator 8 - 12 hours.
- 2. Preheat oven to 400 F (205 C).
- 3. Remove pork from bag; discard marinade.
- 4. Combine sugar and next 4 ingredients (through garlic); rub over pork.
- 5. Roll pork in pecans; press gently to get nuts to stick to the pork.
- 6. Place pork on broiler-pan rack coated with olive oil.
- 7. Bake at 400 F (205 C) for 25 minutes or until your meat thermometer registers 160 F (65 C).
- 8. Remove from oven; let stand 10 minutes.
- 9. Slice and serve.
- This recipe whispers Chinese so maybe some steamed brown rice. Some pickled veggies and. A wee jug of Chinese Sake. You could take it west with a baked potato, some sautéed zucchini and a dry red.
