Pretty Penne Ham Skillet

- • 1 package - 16 oz. (500 g.) penne pasta. Can sub any short pasta. shopping list
- • 1/4 cup olive oil. shopping list
- • 3 Tbs. butter. shopping list
- • 3 cups cubed fully cooked ham. Can sub any meat or fowl but flavor changes. shopping list
- • 1 large sweet red pepper, finely chopped. shopping list
- • 1 medium onion, chopped. shopping list
- • 2 garlic cloves, minced. shopping list
- • 1/4 cup minced fresh parsley. shopping list
- • 1-1/2 tsp. minced fresh basil or 1/2 tsp. dried basil. shopping list
- • 1-1/2 tsp. minced fresh oregano or 1/2 teaspoon dried oregano. shopping list
- • 1 can - 14-1/2 oz. (430 ml.) chicken broth. shopping list
- • 1 Tbs. lemon juice. shopping list
- • 1/2 cup shredded Parmesan cheese. shopping list
How to make it
- 1. Cook pasta according to package directions; drain.
- 2. In a large skillet, heat oil and butter over medium-high heat.
- 3. Add ham, red pepper and onion; cook and stir 4-6 minutes or until ham is browned and vegetables are tender.
- 4. Add garlic and herbs; cook 1-2 minutes longer.
- 5. Stir in broth and lemon juice. Bring to a boil. Reduce heat; simmer, uncovered, 10-15 minutes or until liquid is reduced by half.
- 6. Add pasta; toss to combine. Sprinkle with cheese.
