How to make it

  • Cook fettuccine according to package directions, drain, and set aside. Combine pasta and corn in a large bowl. Combine remaining ingredients in a separate bowl. Fold mayonnaise mixture into fettuccine and corn. Season to taste with salt and more black pepper, if desired. Refrigerate several hours before serving.
  • Makes 10 side-dish servings.
  • *1 cup frozen corn niblets, defrosted and drained well, can substitute for the fresh corn.

    The black pepper adds a lot of flavor as well, the coarse texture is what I like the . The problem I have had with this dish is after it sits for awhile it tends to dry out as the Fettuccine absorbs the juices you can add some milk, mayo, or even some liquid from the corn to the dish to stop the dryness.

    You can Parboil the corn, I know some frozen corn products taste parboiled, if the frozen corn has ice crystals on it be sure and wash those off, they might have an adverse affect on the taste of the corn. I would try the frozen corn as my first choice for this dish . Good Idea Elgournand.
    I wouldn't over steam the corn, you want some crunchiness to this dish. It adds a lot when you are eating the pasta and bite into a sweet , crunchy kernel of corn, Heck, I may even add some sugar to the corn when I parboil it. Just , please don't serve this dish dry.

    Interesting flavor combo Twill. You ain't cookin the corn? I ain't all that keen on raw corn. Mind if I steam the corn a bit?
