Granny’s Fruit Cake

- • 450g/1lb self-rising flour shopping list
- • 125g/4oz caster sugar shopping list
- • 1 tsp baking powder shopping list
- • 1 tsp mixed spice shopping list
- • pinch salt shopping list
- • 125g/4oz unsalted butter shopping list
- • 450g/1lb mixed fruit and peel shopping list
- • 1 tsp bicarbonate of soda shopping list
- • 250ml/9fl oz milk shopping list
- • ½ cup good quality rum shopping list
How to make it
- 1. Preheat the oven to gas 150C/300F/Gas 2. Grease and line a 1.4kg/3lb loaf tin.
- 2. In a bowl sift together the flour, sugar, baking powder, mixed spice and salt.
- 3. Rub in the butter and then fold in the mixed fruit. See Photo
- 4. Stir the bicarbonate of soda into the milk, add the rum then add to the mix and stir until well combined. See Photo
- 5. Spoon the mixture into the loaf tin and place in the oven for 1hr 45 minutes. Keep an eye on the cake and cover it with a sheet of foil if it’s getting too dark.
- 6. Allow to cool a little and then turn out. Serve in slices with plenty of butter.
