Szalonna (Hungarian Dirty Bread)

Hungarian Dirty Bread (Szalonna) is an old peasant meal. Szalonna means bacon in Hungarian but it's not like American sliced bacon ... it's a hunk of smoked pork fat still with its rind. Szalonna was often cooked on spears over an open fire and as the pork fat melted it was dripped onto bread. Read more When fresh vegetables such as onion, peppers, tomato, radish, and cucumber were available they would be used too. Ingredients
- 1 loaf of sliced fresh Rye bread shopping list
- 1 package of fatty bacon shopping list
- 1 onion (I use a sweet onion like Vidalia) shopping list
- 1 green pepper shopping list
- 1 small bag of radishes shopping list
- Optional: 1 cucumber shopping list
- Optional: 1 tomato shopping list
How to make it
- Dice onion, green pepper, and radishes. Set aside.
- If using optional ingredients dice and add them.
- Adjust quantity of any ingredient to taste.
- Cut bacon strips into 4 pieces and pan fry till crispy.
- Reserve bacon grease.
- Spoon dice vegetables onto a slice of Rye bread and spoon hot bacon grease over vegetables. Top with a crisped piece of bacon.

I liked this! I changed it just a bit by slightly cooking the vegetables - onion, pepper, radishes - in the pan with the fat. I drained some of fat & used regular bacon - not extra fatty. Since it was hot, I cubed the dark rye bread & tos...more
