'Possum Soup

- 4 cups of leftover Pork Stew shopping list
- 4 leftover Boneless/ Skinless roasted chicken Thighs and Gravy cut up shopping list
- 1 medium leftover Roasted 'Possum cut up (optional) shopping list
- 2 leftover pan fried Pork Chops cut up shopping list
- 2 cups of leftover White Rice shopping list
- 2 cups leftover Mac and cheese shopping list
- 1 cup leftover White Rice and Stewed Tomatoes with orzo shopping list
- 1 cup left over Garlic Mashed Potatoes shopping list
- 2 cups leftover Mini Wagon Wheel Pasta shopping list
- 2 cups leftover Steamed mixed Veggies or any veggies you have. shopping list
- 2 cups beef broth shopping list
- 8 oz of plain Tomato Sauce shopping list
- Salt and Pepper or any other spices you choose to satisfy your taste, I cook with a lot of spice and these are leftovers and are pretty well spiced. shopping list
- Water or more broth as needed to reach the "thickness" you want to achieve, I like more soupy than stewy. shopping list
How to make it
- Add the liquid ingredients to a large stock pot and bring to a simmer.
- Add the rest of the ingredients to the pot and continue to heat through stirring often to prevent the rice and pasta from sticking to bottom of pot until your creation has reached the temperature you desire to achieve.
- I served this with Biscuits and Butter.
- Note:
- If you have a 'possum and choose to use it an option to cutting it up is simply tying a piece of Butcher's Twine to ol' boys Tail and throwing him in the pot for just the flavor, leaving the string outside so you can retrieve him from the pot before you serve your meal. Kinda like a Bay Leaf !
