Traditional Scottish Oatmeal Skirlie

- 60g/2oz Lard, beef Dripping or butter shopping list
- 1 large Onion - sliced and diced shopping list
- 150g/5oz Medium Oatmeal - preferably not rolled shopping list
- Salt and freshly ground black pepper shopping list
How to make it
- Melt the lard/dripping on a gentle heat in a large frying pan, add the onions and, stirring frequently, cook on a low medium heat for some 3 to 5 minutes or so until softened a bit and lightly brown;
- Add the oatmeal bit by bit, mixing in well till it absorbs the fat then add a little more;
- Season with a little salt and pepper and continue cooking, stirring occasionally, for a further10 minutes or so or until the oatmeal is slightly crisp and golden and to consistency and taste required;
- Season to taste with salt and pepper;
- Serve.
