Kicked up Brown Sugar Pineapple Wild Boar Roast

- 8 pound leg of wild pig shopping list
- 1 can of pineapple slices or 1 fresh pineapple shopping list
- 1 cup of pineapple juice (can use the juice from the canned) shopping list
- 1 cup of dark brown sugar, or to taste shopping list
- dash of pepper shopping list
- dash of salt shopping list
How to make it
- Place roast in baking pan or turkey roaster. Sprinkle brown sugar over the entire roast, and rub in. Season lightly with salt and pepper. Place pineapple slices on roast and secure with toothpicks if desired. Pour liquid from the can (or use 1 cup of bottled pineapple juice) over the roast.
- Cover the roaster and turn the temperature to 275. It should take about 5 hours. Test with a meat thermometer and continue roasting until it reaches 160 degrees.
