How to make it
- 1. If using dried mushrooms boil for 5 minutes to soften.
- 2. Coarsely chop the Langoustinos and water chestnuts.
- 3. Finely chop the bacon, mushrooms, and ginger root.
- 4. Combine all ingredients and mix thoroughly (I use hands)
- 5. Refrigerate overnight.
- 6. Fill round siu mai (aka gyoza) wrappers. Do this by placing a tsp of filling in the center of a wrapper and then pinch the edges upward to form a little bag that is open at the top. Tamp the bottom on the counter to flatten.
- 7. Place on wax paper or parchment sprayed with cooking spray (e.g. Pam) and steam for 20 minutes.
- 8 Serve as finger food with a dipping sauce made of soy and toasted sesame oil.
