Matzoh Ball And Sweet Potato Stew

- 1 recipe matzoh balls- yours or a box mix shopping list
- 2 lbs sweet potatoes peeled and sliced shopping list
- 1 lb carrots peeled and sliced shopping list
- 1 box pitted prunes shopping list
- 1, 16 oz can crushed pineapple drained and reserve the juice shopping list
- 1/2 cup brown sugar shopping list
- 1 tsp salt or to taste shopping list
- pepper to taste shopping list
How to make it
- Prepare you matzoh balls and set aside
- Cook sweet potatoes tender but not overly soft and set aside
- Cook carrots and set aside
- Soften prunes in boiling water and drain and set aside
- Then in a large casserole dish place the cooked sweet potatoes, carrots ,prunes and crushed pineapple.
- Sprinkle with brown sugar, salt and pepper to taste
- Add the matzoh balls and pour on the reserved pineapple juice
- Bake in a 350F about 30- 40 minutes until well heated, basting several times.
