Red Cabbage Slaw

- 4 cups of shredded red cabbage ( a small head of fresh red cabbage shopping list
- 4 cups boiling water or enough water to cover cabbage shopping list
- 2 Tbs white or red wine vinegar shopping list
- 1 tsp salt shopping list
- 3 Tbs fresh lemon juice shopping list
- 3 Tbs salad oil shopping list
- sugar, salt and pepper to taste shopping list
- 1 sweet red apple peeled and grated shopping list
- optional: some grated sweet onion shopping list
- optional: some mayonnaise if desired shopping list
How to make it
- Place the shredded cabbage in a pot
- Cover completely with boiling water
- Stir in the vinegar and salt ( prevents the color from fading )
- Cover the pot
- Let sit covered at least 5-minutes ( this will soften the cabbage and yet leave it with some texture and crunch)
- Drain mixture well
- Stir in the lemon and salad oil, adding equal amounts if more is needed for your taste
- Stir in the grated apple and onion if desired
- Season with sugar/sweetener to taste and salt and pepper
- Chill well
- Note: my mom never used mayo in this recipe but I discovered I like the creamy texture of its addition.

My Mother used to make this back in the 50's
She always added some crumbled bacon to it
