Gluten and Dairy Free Lemon Souffle

- ½ cup superfine sugar shopping list
- 2 tbsp white rice flour shopping list
- ½ tsp salt shopping list
- 2 eggs, separated shopping list
- 1 c plain low-fat soymilk shopping list
- 2 tbsp lemon juice shopping list
- 1 ½ tbsp grated lemon zest shopping list
How to make it
- Preheat oven to 350F
- Mix flour, sugar and salt.
- Beat egg yolks with soymilk, add to dry ingredients.
- Blend in lemon juice and rind.
- Beat egg whites until stiff.
- Fold egg whites into lemon mixture.
- Immediately pour into a large greased ramekin or high-sided baking dish.
- Place in a hot water bath and bake 45 minutes.
- Serve chilled.
