Double Berry Coffee Cake

- 4 cups flour shopping list
- 1 cup sugar shopping list
- 2 tsp baking powder shopping list
- 1 tsp baking soda shopping list
- 1/4 tsp salt shopping list
- 3 large eggs, fork beaten shopping list
- 1 tsp vanilla or almond flavoring shopping list
- 2 cups diary sour cream shopping list
- 1/3 cup oil shopping list
- Filling/topping shopping list
- 1 cup blueberries shopping list
- 1 cup cranberries chopped or 1 cup raspberries, blackberries etc shopping list
- 1/4 cup packed brown sugar shopping list
- 1 tsp cinnamon shopping list
- 1/4 cup finely chopped almonds ( optional ) shopping list
- Glaze: shopping list
- 1/4- 1/3 cup blueberry syrup mixed with some granulated sugar shopping list
- or other desired glaze shopping list
- or powdered sugar shopping list
How to make it
- Sift dry ingredients into a large bowl
- Make a well in center and add sour cream, eggs,oil and vanilla
- With a hand held electric beater, beat medium speed until well blended
- In another bowl combine berries with the sugar and cinnamon
- Grease and flour a bundt pan very well
- ( I use baking spray )
- Add 1/2 batter to pan, and sprinkle with 1 cup of berry filling
- Add remaining batter and sprinkle on remaining berry mixture
- Sprinkle almonds over if using
- Bake in a preheated 350F center rack until cake tests done with a toothpick, about 60-70+ minutes
- Place cake pan on rack to cool
- When warm, poke some holes in cake with toothpick
- Drizzle on glaze as desired or dust heavily with powdered sugar when cool.
- Remove from pan when cold
