Beet Egg Salad

Fresh cooked beets add flavor and color to make an ordinary egg salad special. Use over greens, in wraps, to stuff tomatoes etc. So tasty and so pretty!
Ingredients
- 5 hard boiled eggs, peeled and diced for egg salad shopping list
- 2 fresh beets cooked, peeled diced shopping list
- little mayo to bind shopping list
- some fresh chopped red onion shopping list
- some fresh chopped parsley shopping list
- salt and pepper to taste shopping list
How to make it
- Gently mix all, season to taste
- use in wraps, over greens etc.
- Note: Looks pretty, tastes great!
