Almond Flour Pound Cake

- 1/2 cup (1 stick) butter, softened shopping list
- 1/2 cup cream cheese, softened shopping list
- 3/4 cup white granulated sugar shopping list
- 4 eggs ( see note below ) room temeperature shopping list
- 1 teaspoon vanilla shopping list
- 2 cups almond flour shopping list
- 1 teaspoon baking powder shopping list
- 1/4 teaspoon salt shopping list
- 1/4 teaspoon ground nutmeg shopping list
- 1/4 teaspoon ground cardamom shopping list
- 1/2 tsp cinnamon shopping list
How to make it
- Preheat oven to 350°F.
- Oil a 9 x 5 inch loaf pan, line with wax paper and oil top of paper.
- Beat butter, cream cheese, sugar in large bowl with electric mixer until well blended.
- Add eggs, one at a time, beating after each addition.
- Beat in vanilla.
- Combine almond flour with salt, baking powder, cinnamon, nutmeg and cardamom in a bowl.
- Gradually add to egg mixture while beating on medium speed.
- Mixture may seem loose
- Pour into prepared pan
- Bake 45 to 55 minutes or until toothpick inserted into center comes out clean.
- Cool in pan 15 minutes and carefully remove from pan to rack to cool completely
- Note: for a lighter textured baked good, may separate the eggs, beat yolks into the creamed mixture, beat white soft peaks and fold into the batter
- Serve with berries and cream if desired.
