Crab And Tuna Salad

This is another salad requested by a client for a buffet. it's delicious with crackers, as a spread, to fill hollowed out tomatoes,on lettuce leaves etc. Imitation crab is second best to real crab but this is still super!
Ingredients
- 1 large pkg of imitation crab meat ( surini ) ) shopping list
- 1 can of albacore tuna drained shopping list
- mayonnaise to bind shopping list
- 1 small red onion minced onion, red or while shopping list
- 1 large red bell pepper finely chopped shopping list
- 1 large stalk of celery finely chopped shopping list
- juice from a fresh lemon shopping list
- salt and pepper to taste shopping list
How to make it
- In a food processor,or by hand finely chop each vegetable
- Place vegetables in a large bowl
- Then in food processor finely chop the imitation seafood along with the tuna
- Mix all together.
- Bind with good quality mayo, juice from a fresh lemon and salt and pepper to taste.
- Note: I served the salad in a large white ceramic fish tray and garnished with lemon slices and fresh parsley

I served it in hollowed out tomatoes and it was very yummy. I put not that much mayonnaise and the juiciness of the tomatoes compensated for that.
