Jamie Oliver's Butterflied Steak Sarnie

- 1 cup sliced white mushrooms shopping list
- 2 small filet mignons shopping list
- 1 1/2 cups spinach, washed and trimmed shopping list
- 1/2 tsp. dried rosemary shopping list
- salt and freshly ground black pepper shopping list
- olive oil shopping list
- 2 ciabatta buns shopping list
- 1 slice of lemon shopping list
- Dijon mustard shopping list
How to make it
- Butterfly your two pieces of steak by carefully slicing horizontally through the middle of each piece, using long, slow slicing movements, and then open each one out like a book.
- Sprinkle rosemary, salt and pepper on your steaks patting them down so that the seasonings stick. Give them a little drizzle with olive oil. Then turn them over and do the same with the other side.
- Heat grill pan on stove and then add the steaks. Cook for about 8 minutes, or until your liking, turning every couple of minutes.
- Remove the steaks from the pan to a plate to rest. Cover with foil to keep warm.
- Saute mushrooms in olive oil in a non-stick frypan. When done, put them in a bowl and set aside. Use the same pan to wilt the spinach in and once that occurs, set it aside as well.
- Halve the ciabatta buns and brush open side with olive oil. Place the buns open faced down in the grill pan so you get some nice charred marks on the bread and toast them for a minute or two.
- Place your toasted buns open side up on your plate, spread with Dijon mustard and then put the steamed spinach on top. Place one piece of steak on top of the spinach. Squeeze a little bit of fresh lemon juice and then add the sauteed mushrooms on top of the steak.. If you have any juices left in the grill pan, you can pour this over top so it can soak in to the bread! :) Enjoy!
