Hot Nicoise Salad With Roasted Fish

- 1/2 lb green beans shopping list
- 1 cup halved grape tomatoes shopping list
- 1/2 cup pitted nicoise olives shopping list
- 1 cup roasted bell pepper cut into strips shopping list
- 2 cans anchovies ( drained ) and chopped, 1 used 1 can shopping list
- 1/2 cup fresh torn basil leaves shopping list
- 1/2 cup extra virgin olive oil divided shopping list
- A little additional olive oil shopping list
- salt and fresh ground black pepper to taste shopping list
- 4, tuna steaks- 6 oz each, 1 inch thick ( I used tuna and salmon ) shopping list
- 4 large eggs ( I used 2 ) shopping list
- 2 Tbs fresh lemon juice shopping list
How to make it
- Steam green beans
- Preheat oven to 400F
- Place beans in a roasting pan
- Add tomatoes but squeeze them as you add them to pan
- Add olives, anchovies,basil and 1/4 cup olive oil
- Salt and pepper to taste
- Brush the fish with some olive oil
- Season with salt and pepper
- Set fish atop the vegetables
- Nestle ramekins in pan
- Crack an egg into ramekin
- Drizzle eggs with a little olive oil, salt and pepper
- Roast everything in center oven rack for 15 minutes or until tuna is slightly rare in center and egg whites are set with yolks a bit runny
- Meanwhile whisk the remaining 1/4 cup olive oil with the lemon juice
- Drizzle the oil and lemon over the vegetables and fish and serve immediately
