Steak And Cheese Empanadas

- canola oil to fry shopping list
- 1/2 lb. shaved steak shopping list
- 1 small onion, diced shopping list
- 1/4 cup bell pepper, diced (I used yellow) shopping list
- 1/2 cup shredded cheese of your choice (I used a Mexican blend) shopping list
- 1 tbls. hot pepper relish (Use more or less to suit your taste) shopping list
- 5 frozen empanada dough discs, thawed shopping list
- water shopping list
How to make it
- Preheat oven to 200
- In skillet, add oil and turn heat to medium
- Add pepper and onion and saute until crisp tender
- Add pepper relish and steak
- Cook until meat no longer pink
- Remove from heat and cool
- Add cheese and mix to combine
- Add meat mixture to middle of dough discs
- Add water to rim of disc
- Fold in half and seal with a fork
- In Dutch oven, pour oil up 3-4 inches
- Add thermometer and turn heat to high
- When oil reaches 350 add empanadas in batches
- Fry until golden brown, about 2-3 minutes and then flip and fry other side
- Remove to baking rack and put in oven to keep hot while cooking remaining enpanadas
- I added extra pepper relish to mayo for a dipping sauce
