Tofu Meatloaf

- 1/2 (14 oz) package firm tofu, drained and mashed shopping list
- 1 lb ground turkey shopping list
- 1/4 cup bread crumbs shopping list
- 1/2 (1 oz) envelope dry onion soup mix shopping list
- 2 Tbsp bell pepper, minced shopping list
- 1 egg white, beaten shopping list
- 3 Tbsp brown sugar (or amber agave) shopping list
- 3 Tbsp soy sauce shopping list
- 1/2 tsp Dijon mustard shopping list
How to make it
- 1. Preheat oven to 350 degrees F (175 C). Lightly grease a bread pan or 9-inch square baking dish.
- 2. In a bowl, mix the tofu, turkey, bread crumbs, soup mix, green pepper and eggs. Place the mixture into the prepared pan. Mold into a loaf shape.
- 3. Create the glaze in a saucepan over low heat. Blend the sugar, soy sauce and mustard.
- 4. Bake the meatloaf 30 minutes. Drizzle the sauce mixture and continue baking 15 minutes, to an internal temp of 180 degrees F (80 C).
