Stuffed Zucchini--koosa

- 6 medium zucchini shopping list
- 2 Tbsp olive oil shopping list
- 1/4 cup rice shopping list
- 1 small onion, finely chopped shopping list
- 2 garlic cloves, finely chopped shopping list
- 1/4 kg ground beef shopping list
- 1 teaspoon ground allspice shopping list
- 2 teaspoons salt shopping list
- 3/4 teaspoon black pepper shopping list
- 1 fresh red tomato juiced shopping list
- 2 Tbsp tomatoe paste shopping list
- 2 cup chicken stock or water shopping list
- 1 lemon shopping list
- For base: potato sliced and Ribs shopping list
How to make it
- 1. Hollow out each zucchini, working from one end with an apple corer, removing all seeds and leaving shells about 1/3 inch thick See Photo. Discard pulp and seeds. See Photo
- 2. Wash rice in several changes of cold water in a bowl until water runs almost clear, then drain in a sieve. Heat oil in a skillet over moderately high heat until hot but not smoking, then sauté onion, stirring, until golden, 6 to 8 minutes. Add garlic and cook, stirring, 1 minute, then remove skillet from heat.
- 3. Transfer onion mixture to a bowl and cool slightly. Add rice, meat, allspice, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper and mix well with your hands. Stuff zucchini shells with meat mixture, being careful not to pack tightly (rice will expand during cooking). See Photo
- 4. In pressure cooker, adjust Potatoes at the bottom following the Ribs and then adjust the stuffed Zucchini.
- 5. Add tomato juice, stock/water, remaining 1/2 teaspoon salt, and remaining 1/4 teaspoon pepper. Cook for 10-20min.
- Squeeze lemon over dish before serving.
