Zig Zag Molasses Loaf Cake

- 2 cups flour shopping list
- 2 tsp baking powder shopping list
- dash salt shopping list
- 1 stick butter or margarine softened shopping list
- 3/4 cup sugar shopping list
- 2 eggs shopping list
- 1 tsp vanilla shopping list
- 1/2-3/4 cup milk or as needed shopping list
- spiced molasses: shopping list
- 1/4 cup molasses shopping list
- 1/2 tsp cinnamon shopping list
- 1/4 tsp nutmeg shopping list
- 1/4 tsp cloves shopping list
How to make it
- Preheat oven to 350F
- Grease and flour an 8 inch loaf pan
- Cream butter and sugar till fluffy
- Beat in the eggs and vanilla
- Sift flour with baking powder and salt
- Alternately add enough milk with the dry ingredients to the creamed mixture to form a thick cake batter
- Mix the spices into the molasses well
- Place 1/2 batter in the pan.
- Drizzle 1/2 of the molasses in a zig zag pattern over the batter.
- Add the top batter and drizzle the molasses over the top, zig, zag with tingues of a fork if desired.
- Bake in a 350F until tested done in center with a toothpick ( mine took over 40 minutes )
- Cool on rack till warm
- Dust with powder sugar and serve
- Note: I supposes a white drizzle icing also would go well with this

Such a wonderful loaf! I baked mine the night before so all the flavours could meld together before trying it. It turned out so much better than I imagined! I baked mine in a glass pan for 45 minutes, but it could have easily been done in 40minutes, ...more
