Chicken Fried Chicken With Peppered Country Gravy

- 2 cups self rising flour shopping list
- salt to taste shopping list
- 6 turns of pepper grinder shopping list
- cajun seasoning shopping list
- 3-4 boneless, skinless chicken breasts, pounded flat (I did them to 1/4 inch) shopping list
- canola oil for frying plus 2 tbls. bacon fat shopping list
- gravy shopping list
- 1/4 cup pan drippings shopping list
- 1/4 cup seasoned flour (see cooking instructions) shopping list
- 1-1/2 cups milk shopping list
- salt, to taste shopping list
- cracked black pepper, to taste shopping list
How to make it
- Preheat oven to 200
- Add salt and pepper to flour and combine
- Set aside 1/4 cup for gravy
- Lightly sprinkle chicken with Cajun seasoning
- Dredge in flour, shaking to remove excess flour
- Rest at room temperature for about 10 minutes
- Just before cooking chicken, dredge into the flour again if desired, shaking off excess (I dredged twice)
- Heat oil and bacon fat in cast iron or heavy bottomed skillet over a medium high heat
- Cook chicken in batches to avoid overcrowding, until browned on the bottom; turn and finish cooking until golden brown and cooked through Place on baking rack over a baking sheet and put in oven @ 200 to keep warm
- Remove all but 1/4 cup oil from skillet
- Over medium heat, sprinkle in 1/4 cup of reserved seasoned flour a little at a time
- Cook, stirring constantly until a light blond color
- Slowly whisk in milk until fully incorporated and until mixture begins to thicken
- Bring to boil, reduce heat and let cook for a few minutes
- Add additional milk or water if needed to reach desired consistency (I added about 2-3 tbls. more milk)
- Taste, season with salt and plenty of pepper
- Serve with gravy poured over chicken

Very good! Used regular flour thinking it would be fine but didn't get the nice crust you got in the pic, so that must be why. Loved it though and so happy to find this recipe! Very close to one at a local restaurant. Thanks wynne! More more
