Steamed Banana Bread

- 1/3 cup butter softened shopping list
- 3/4 cup white granulated sugar shopping list
- 1 large egg room temp. shopping list
- 1 tsp vanilla shopping list
- 2 ripe bananas mashed shopping list
- 1 1/2 cup flour shopping list
- 1 tsp baking powder shopping list
- 1/2 tsp baking soda shopping list
- dash salt shopping list
- 1/3 cup buttermilk or soured milk shopping list
- glaze shopping list
- chocolate chips melted with some heavy cream shopping list
How to make it
- Note: this recipe is for an electric pressure cooker and after making several baked goods I am finding out one only needs about 2 cups of water to create cake like textures, and more water for more pudding like textures.
- Cream sugar and butter well.
- Beat in vanilla and egg well
- Beat in the mashed/puree bananas
- Combine the flour, baking powder, baking soda and salt
- Add the dry ingredients along with the buttermilk and blend mixture well.
- Pour into a greased and floured 8 x 4 loaf pan.
- Batter should be half full but never more than 2/3 full
- Seal top of loaf pan with buttered foil
- Place a wire rack in the bottom of the cooker pan
- Add 2 cups water
- Place the prepared loaf on the wire rack
- Pressure cooker 30 minutes and let steam dissipate natural ( don't open exhaust )
- Remove loaf pan from cooker with tongs
- Place on a rack
- Remove the foil
- Let cool to warm and carefully remove from pan, placing upright on serving plate ( Loaf will feel very soft as does steamed cakes)
- Glaze as desired
- Slice when cool
- Wrap well to store and as with banana breads, flavor improves with age.
