Portuguese Codfish Cakes

- 1 pound salted codfish shopping list
- 4 large potatoes, peeled and cubed shopping list
- 2 small eggs shopping list
- 1 tbsp onion, finely chopped shopping list
- 4 tbsp parsley, finely chopped shopping list
- pinch of black pepper shopping list
How to make it
- Soak cod fish overnight. The next day pour off old water and add new. Let it soak for another hour or so, pour off this water. Put the fish in a pan and cover with water. Bring fish to a boil. If after the water boils the fish is still salty change the water and boil again. This depends on the thickness of the fish steaks.
- Boil the potatoes until tender. Mash the cod and the potatoes together. Add the eggs, parsley, onion, and pepper
- Shape into little baseballs using 2 tablespoons. See Photo
- Fry the cakes in oil until golden brown.
- Drain on paper towels.
