Fried Squirrel

How to make it
- Soak the cleaned squirrels in salt water for a couple days in the refrigerator; then soak them in buttermilk the night before.
- Cut up the squirrel into pieces
- Heat your crisco to medium high
- Coat them with the eggs
- In a separate bowl, have your flour, bread crumbs, and seasonings
- Dredge the egg coated pieces in the flour mixture
- Fry on med/high till brown on both sides
- Reduce heat, cover and fry for about 30 min.
- Remove the lid and increase heat again til crisp
