How to make it

  • Soak the cleaned squirrels in salt water for a couple days in the refrigerator; then soak them in buttermilk the night before.
  • Cut up the squirrel into pieces
  • Heat your crisco to medium high
  • Coat them with the eggs
  • In a separate bowl, have your flour, bread crumbs, and seasonings
  • Dredge the egg coated pieces in the flour mixture
  • Fry on med/high till brown on both sides
  • Reduce heat, cover and fry for about 30 min.
  • Remove the lid and increase heat again til crisp
