Mukimame Vegetable Soup

- 2 cups mukimame (shelled young soybeans) shopping list
- 1 to 2 cups broth shopping list
- 1/2 cup red bell pepper, chopped shopping list
- 1/3 cup onion, chopped shopping list
- 1/2 to 1 cup squash, chopped shopping list
- 2 cloves garlic, chopped shopping list
- handful of fresh cilantro, chopped shopping list
- salt and freshly ground pepper to taste shopping list
How to make it
- Put mukimame into slow cooker and add all but the last three ingredients. Cook on LOW 3 hours or until mukimame is tender. Remove from cooker, add cilantro, salt and pepper, give a quick stir, and serve with a side salad.
