Campin' Jack Beans

- 1lb dry great northern, or similar bean, soaked and cooked per package directions) shopping list
- 1 medium onion, halved(you can also dice this and saute it a bit, or toss it in, raw... we love the flavor of the onion in these, but we don't bother to cut anything up at a camp site :) shopping list
- 1-3 fresh hot peppers(again, you can just toss 'em in whole or derib, seed, and dice them before adding them) shopping list
- About 28oz tomato sauce shopping list
- 3T brown sugar(if you like a sweeter bean, add a bit more) shopping list
- 3T honey(as above) shopping list
- 1/2 cup molasses shopping list
- 1/4 cup worcestershire sauce shopping list
- 1-2t liquid smoke shopping list
- 2y dry mustard shopping list
- 1T mild chili powder(I have used ancho, pasilla, and just regular "chili", chili powder) shopping list
- 1/2-2t cayenne, to taste shopping list
- 1T smoked paprika shopping list
- kosher or sea salt and fresh ground pepper(they are beans, they will need some salt :) shopping list
- 1/4-1/3 cup Jack Daniels Whiskey shopping list
How to make it
- Combine all ingredients into cast iron, or other appropriate, dutch oven, or slow cooker.
- Cook between 250-300 degrees for 2-6 hours(depending on temp).
- You can stir the beans every hour or so, if on the campfire, stove top or oven and maybe every 2 hours if in the slow cooker or on the grill, or you can just wait til towards the end of cooking time and get "ugly" beans, like in the photo... ugly but tasty! :)
- *these beans can cook on the stove top at a good simmer, in the oven or grill or campfire at around the 250-300 mark. You only need to cook until warm and beans are at desired texture...BUT, the longer you cook 'em, the better they will taste. You can also cook them in the crock pot... I would guess, on low, for at least 8 hours.
