Ranchero Sauce

- 2-3 tomatoes vine or whole reg.size. 3-4 diced jalapeno's 1/2 diced onion, 2 tablespoon chives or 2 long diced green onion ,1 can or 2 depending how much your making some for now & some for freezer can/s of small tomato sauce. large if your making bigger batches. garlic powder or minced garlic 2 tablespoons. 2 tablespoons of butter or margarine or olive oil.1 teaspoon pepper shopping list
How to make it
- Dice all veggies,1/2 onion ,3-4 diced jalapeno's,green onion or chive, 2 spuds of the whole clove of minced garlic clove, with a little teaspoon if reg. salt or sea salt, coarse salt,stir,put aside. In a med/large fry pan add two tablespoons of butter or olive oil. saute veggies & garlic for about 3-5 min. add tomatoes, stir for about 3-5 minutes then add 1 can of tomato sauce, & salt & a little pepper. Simmer on low for about 5-7 minutes. Then put into a med -small bowl with small ladle or a med-size creamer jar with spout For pouring. Then top on over easy eggs (Wuevos con Ranchero Sauce serve w. re-fried beans topped with shredded cheese & bacon or sausage, tortillas or toast..Or serve with sliced roast beef..
