Sweet Carrot, Parsnip and Zucchini Soup

- 3 carrots shopping list
- 1 large parsnip shopping list
- 1 small onion shopping list
- 1 zucchini shopping list
- 1 potato shopping list
- 2 teaspoons of whole black peppercorns shopping list
- A pinch of marjoram shopping list
- A pinch of thyme shopping list
How to make it
- 1. Peel and cut the carrots, parsnip, potato, onion and zucchini in to cubes.
- 2. Add to a large pot, and add 2 cups of water (more as necessary).
- 3. Add a the black peppercorns, marjoram , and thyme.
- 4. Let simmer for 25 minutes or until carrots and potatoes are tender.
- 5. Use a hand held blender to blitz, does not have to be completely pureed. It is always good to have some small chunks of the vegetables.
