How to make it

  • 1. Peel and cut the carrots, parsnip, potato, onion and zucchini in to cubes.
  • 2. Add to a large pot, and add 2 cups of water (more as necessary).
  • 3. Add a the black peppercorns, marjoram , and thyme.
  • 4. Let simmer for 25 minutes or until carrots and potatoes are tender.
  • 5. Use a hand held blender to blitz, does not have to be completely pureed. It is always good to have some small chunks of the vegetables.
