Fiery Fettuccine

- 1 lb. smoked turkey sausage/kielbasa, sliced 1/4 inch on a bias shopping list
- 1 Tlbs. canola oil shopping list
- 1 med yellow onion, finely diced shopping list
- 1 jar (7oz.) roasted red bell peppers, drained, and one pepper finely diced shopping list
- 1 tsp. salt shopping list
- 1 c. heavy cream shopping list
- 1 Tlbs. creole seasoning (like Zatarain's) shopping list
- 1/2 c. water shopping list
- 8 oz. uncooked wide egg noodles shopping list
- 1 Tlbs. sriracha sauce (optional) shopping list
How to make it
- 1. In a frying pan over medium-low heat, brown the sausage slices, making sure to brown both sides.
- 2. Remove cooked sausage and warm pan to medium, add oil and sweat onions and diced red pepper with salt, approx 5 minutes.
- 3. In a blender or food processor, combine cream, creole seasoning and rest of roasted bell peppers on high until smooth.
- 4. Pour pepper mixture into pan with onion mixture and add back in the cooked sausage. Rinse blender with approx 1/2 c. water and pour into mixture, and bring to a boil. Turn down to low and simmer, stirring occasionally, until mixture thickens, approx 15 minutes. (optional, add sriracha to taste...or fiery-ness)
- 5. Cook and drain pasta as directed and serve hot with sausage mixture.
