Quick Wasabi Cucumber Pickles

- 2-3 kirby cucumbers, sliced paper thin shopping list
- 1/2 tsp salt shopping list
- 1/2 tsp wasabi powder shopping list
- 2 tbs brown rice vinegar shopping list
- 1/2 tbs sugar shopping list
- 1/4-1/2 tsp soy sauce shopping list
How to make it
- Toss the cucumbers with the salt and leave them to drain in a colander for 15 min.
- Mix the wasabi with 1/2 tsp of water to form a paste; leave to stand for a few minutes
- Drain cucumbers and pat them dry.
- Add vinegar, sugar and soy to the wasabi paste and whisk to combine. Add cucumbers and toss to mix. Serve immediately or chill in the fridge.
