Spinach Scoop Chips With Salsa

for the spinach chips
- 1 package large spinach tortillas (6) shopping list
- olive oil shopping list
- sea salt shopping list
for the salsa
- 4 cups grape tomatoes shopping list
- 1/2 red bell pepper, seeds removed & coarsely chopped shopping list
- 1 banana pepper, seeds removed & coarsely chopped shopping list
- 1 large garlic clove shopping list
- 1/2 yellow onion, coarsely chopped shopping list
- juice of 1 lime shopping list
- juice of 1/2 lemon shopping list
- salt & freshly ground black pepper, to taste shopping list
How to make it
for the spinach chips
- Preheat oven to 450 degrees Fahrenheit. Set out a mini muffin sheet (mine would make 24 muffins).
- Slice tortillas into 4 equal strips, then cut in half, creating squares (the edges will be triangles). Gently press each square or triangle into the muffin sheet to form the scoops. Brush liberally with olive oil and sprinkle with sea salt.
- Bake for 7 minutes on the middle rack until crispy. Repeat process until all of the tortillas are used up.
for the salsa
- Add all ingredients into a food processor until finely pureed. You may need to add ingredients in batches, and transfer your finished product to a large bowl when finished. Add salt & pepper to taste, enjoy!
